The nose offers an array of dark berry fruit aromas, from ripe cherries, blackberries and blackcurrants through to sweet blueberries. Sweet spice notes of liquorice, cinnamon and cloves echo throughout the full, rich, and mouth-filling palate. The bubbles from the prise de mousse add softness and weight to the middle palate with fine chalky tannins contributing structure and length, and a bright, persistent and savoury finish.
First produced in 1997 and often described as a black forest gateau in a glass, it is almost the perfect descriptor for this rich, powerful and luscious Sparkling Red that is one of the cornerstones of Fox Creek’s portfolio. The powerful fruit flavour profile of our Shiraz and rich structural tannins of the Cabernet Sauvignon, complemented by the focus and herbal lift of the Cabernet Franc, combine to give the wine an exquisite balance and drinkability.
Dame Nellie Melba was an international darling of early 20th Century opera and friend of former Seppelt owner Hans Irvine. Legend has it she was curious to bathe in sparkling wine, so we obliged, filling a bath with 152 bottles of our finest.

Since the 1890s, Seppelt has enjoyed a distinguished history of producing Sparkling Shiraz and is a global pioneer of the uniquely Australian wine style. Although there are no precise records, Charles Pierlot from Hans Irvine’s Cellars (known as Seppelt since 1918) experimented with making some of Australia’s first ‘Sparkling Burgundy’ wines, as they were known, in 1892. 125+ years later, this legacy continues, and today Seppelt enjoys a reputation for producing the world’s finest expressions.
Sourced from select vineyards throughout Victoria, Seppelt original Sparkling Shiraz is a superbly balanced wine with vibrant, spicy shiraz fruit and a fine, creamy mousse. Serve chilled.
