Utterly aggressive and only tamed with a tonne of smooth and slickly textural Pinot Gris. Hand picked, whole bunch pressed, settled overnight before going unto seasoned French Oak for 4 months on fine lees. Wild yeast, minimal sulphur added at bottling.
Pinot Noir for red fruits, Pinot Gris for weight and texture and Chardonnay for purity and freshness.
Nose: Lifted red fruits and perfume. Nuances of rose petals.
Palate: Is driven with lime juice, rose petals, nashi pears and grapefruit.
