The wine sees neutral French and American oak that seasons the pure fruit. There are aromas of violets, black current, dark cherry and a mineral note.

 

These elements come together on the palate with soft tannins and a touch of bittersweet chocolate that follow through with fine length.

Cullen-Diana Madeline-Cabernet Sauvignon Merlot-2004-750mL

The 2004 Diana Madeline was produced using biodynamic techniques, which Cullens believe is crucial for optimising the quality of the fruit flavours and for investing the wine with a velvety structure and very high quality tannins.

 

It was made from a blend of 84% Cabernet Sauvignon, 13% Merlot and 3% Cabernet Franc. The fruit was picked at Baumés ranging from 12.1-13.7, producing an average value of 13.5º. The wine was matured for 18 months in French oak, of which 54% was new.

The nose shows intense blackcurrant and cranberry fruit, and the subtle cedary cinnamon spice, barrel-ferment and oak derived aromas, violet and mint scents, as well as liquorice and chocolate smells. Interwined is this wounderful green edge that lifts the wine into a cool climate sepctrum which typifies the cold year.

 

These Aromas combine with some cassis, blueberry,and cranberry, with lingering mocha and plumy fruit and are just showing through amongst a long, intense vibrant, gritty fruit tannin finish.

Fox Creek-Reserve-Cabernet Sauvignon-1999-750mL

Strong bright rim with a deep red core. The lifted bouquet of this Cabernet is reminiscent of red cherries and hints of blackcurrant. This wine shows a little more herbaceous character, although the typical McLaren Vale dark chocolate character is still evident. The oak is particularly attractive, showing some subtle cinnamon and a hint of char.

The palate shows rich, sweet blackberry and chocolate, with the tannin structure tight. The middle palate is full and is followed by a drying, elegant finish. With flavours that are very persistent and a tight structure, this wine shows potential for ageing well.

Giaconda-Estate-Cabernet Sauvignon-2001-1.5L

Plum red hues; red berries, earth, vanilla bean, cedar and violets - intoxicating. The palate is sensual: sweet plum fruit, hints of vanilla, pungent wafts of violets, the slightest suggestion of toasty oak at the end, and Rick Kinzbrunner's fine lingering tannin signature. It is hard to imagine this as an Australian Cabernet. It is more akin to a cross between a Margaux and a Pomerol. It has the femininity of Margaux and the gloriously ripe plum fruit of Pomerol. This wine addresses the issues of fruit, tannin, oak and acid balance with considerable aplomb. Intense and sophisticated. Clearly the most distinguished and cerebral Cabernet to date from Giaconda.

Jim Barry-The Benbournie-Cabernet Sauvignon-2010-750mL

The Benbournie region was settled in 1853 by Catholic German friends of local priest, Father Kranewitter. The tiny settlement comprises about 15 mud huts surrounded by a Roman Catholic chapel. The small community’s optimism was built on copper mining, however the industry’s decline signalled its demise before the turn of the century.

 

All that remains today are a few ancient vines, fig and almond trees. Wine has been flowing in the Clare Valley since 1851 and is an integral part of the culture.

 

It is one of Australia’s most prestigious premium wine regions, most famous for its Riesling and Shiraz. A small area, accounting for less than 1.5% of Australia’s total wine production. With its beautiful, rolling hills, ideal winter rainfall and Mediteranean climate, the Clare Valley carries a unique history and winemaking heritage.

 

Tasting notes:

This wine is a deep crimson red in the glass. Intensely aromatic with a mix of both red and black currant fruit with a hint of savoury spice and dark mint chocolate.

Opens with a burst of dark vine fruits countered with notes of sage and clove spice. Layers of fresh currants, spice, earth and chocolate give the palate great intensity and depth of flavour.

This vibrant core of fruit runs long with fine, graphite like tannin and cedary oak. A soft, layered, tireless finish closes out a wine of great balance and cellaring potential.

The fruit dominant palate displays flavours of bIackberry, cedar, mocha chocolate, liquorice and mint combined with fine integrated oak and grape tannins and a long persistent finish.

 

This red developed beautifully in the glass and is an excellent food wine, which will complement rather than dominate food.
