With a considerable portion of this wine being naturally fermented (no yeast added), the wine reveals earthy aromas of salami, game, and lipstick. Fox Creek Fox & Hounds Shiraz Cabernet Sauvignon 2002 750mL

A special McLaren Vale Shiraz-Cabernet Sauvignon blend from the excellent 2002 vintage. Originally made for a private client from Fox Creek's own grapes, it was for sale to private customers and not available for normal retail sale. The blend in this wine is 60% Shiraz and 40% Cabernet Sauvignon. The Shiraz was fermented on skins for 8 days and about 10% of the wine saw barrel fermentation during the later stages of the fermentation. The Cabernet Sauvignon components were fermented to dryness, before being transferred to oak. Maturation was in approximately 20% French and 80% American oak, with about 30% of this being new oak.

Fox Creek Fox & Hounds Shiraz Cabernet Sauvignon 2003 750mL

Appears bright cherry red with a darker plum coloured core. The nose shows licorice and dark fruits, toasty oak with a chocolatey rum & raisin aroma. The entry to the palate is soft with a rich solid palate that is typically McLaren Vale, with blackcurrant and stewed plum flavours. The structure is typical of Fox Creek showing ripe fruit tannin with integrated oak complexity.

Fox Creek JSM Shiraz Cabernet 2001 750mL

A bright wine with a red rim and a darker plum coloured core. Spicy red cherry and dark cherry combination with a smoky character derived from 15 months in oak. There are also hints of caramel from barrel maturation and pepper from the Shiraz component in the wine. As a young wine, the entry to the palate is soft yet fresh. In the mouth the wine expands to give a range of flavours from cherry and dark berries to a spice-like quality. The tannins are firm, but soft enough so as to complement the fruit weight. The wine has a sweet middle palate, but finishes dry.

2005 Parson’s Flat has a dense ripe cherry colour with a purple hue. The nose displays a concentrated array of mixed forest berries, smoky cigar box, spicy pepper, clove, caramel and mocha. An initial sweet concentrated explosion of luscious blackberry on the palate leads to savoury spice, coffee bean and liquorice. Cabernet Sauvignon is still evident, contributing some attractive leafy and spearmint/peppermint flavours. Firm and granular tannins leave the mouth with a persistent coating. A finely tuned blend that allows both varieties to express themselves.

Jim Barry 'Pb' Shiraz Cabernet Sauvignon 2012 750mL

It's fascinated the way by which Shiraz and Cabernet Sauvignon blend so well together in a harmony of the senses.

Tasting notes:

This wine has a rich inky red hue in the glass.

On the nose it shows fruit cake characters, blackberries and cranberries, rounded off by secondary aromas of nutmeg with a finish of sweet mint.

Bursting with vibrant bright red fruits, the palate has a lovely juiciness with a lick of earthy mushrooms and truffles. This wine has a nice oak drive, providing balance and persistence, which continues to develop. Feminine tannins maintain its youth with bright primary fruit and integrated sweet vanilla and cedary oak.

Penfolds Grange Shiraz Cabernet Sauvignon 2009 750mL

Grange is arguably Australia’s most celebrated wine and is officially listed as a Heritage Icon of South Australia. Grange boasts an unbroken line of vintages from the experimental 1951 and clearly demonstrates the synergy between Shiraz and the soils and climates of South Australia. Penfolds Grange utilises fully-ripe, intensely-flavoured and textured Shiraz grapes. The result is a unique Australian style that is now recognised as one of the most consistent of the world’s great wines. The Grange style is the original and most powerful expression of Penfolds multi-vineyard, multi-district, blending philosophy.

GRAPE VARIETY

98% Shiraz, 2% Cabernet Sauvignon.

VINEYARD REGION

Barossa Valley, McLaren Vale, Clare Valley, Magill Estate.

WINE ANALYSIS

Alc/Vol: 14.5%, Acidity: 6.6 g/L, pH: 3.53. MATURATION 18 months in 100% new American oak hogsheads

VINTAGE CONDITIONS

Near-optimum rainfall over winter, followed by dry, mild conditions over spring provided a good environment for budburst and an ideal start to the growing season with canopies developing well. Climatic conditions favoured flowering and set with mild and calm weather, however there was some shatter in Shiraz across parts of the state resulting in small crops for many regions. Some early to mid-December summer rainfall was followed by conditions drying up very quickly and continuing until the end of February. Summer was hot with some extreme heat but cool conditions returned in February and March, allowing the fruit to ripen across a long harvest with balanced acidities and excellent tannin ripeness. An elegant, yet still powerful follow up to the conditions brought about in the preceding 2008 vintage.

NOSE

At once Grange – formic, assertive, powerful… with overt barrel-ferment markers. Bright, and noticeably fragrant/perfumed at this time of tasting, in its fifth year immediately prior to release. Racy red fruits clasp onto red liquorice, aniseed aromatics. Red meats (corned beef ?) with pepper and spice, rumtopf. Patiently, panforte/mascarpone/malt/dried fig aromatics appear in a second wave. No hurry – the curtain is up, the stage reserved for decades!

PALATE

Captivating/tempting/alluring – yet another subtle variation on the theme/expression of this thing called Grange. Voluptuous and generous, yet poised and harmonious. Assured, and not attempting to overstate its weight/extract/presence. Immediately apparent flavours of chocolate, mocha, cola and juicy plum entwine and converge toward the panforte impression aromatically sensed earlier. Tight and defined, with excellent grip – savoury/tannic. These tannins are both integrated and balanced, colluding with 100% new oak that is all but completely absorbed.

Torbreck Descendant Shiraz Viognier 2014 750mL

From the cuttings taken from old vines used to plant the vineyard, and the Viognier skins the Shiraz was crushed onto, to the barrels it was matured in, this wine is directly descended from RunRig.

The 2014 vintage benefitted from a cooler period in mid-February, resulting in longer ripening periods and relatively low yields providing fruit with good concentration and depth.

Descendant was picked on the 13th March with lifted aromatics and a rich, pure fruit profile.

Intense, dark berry fruits with an underlying perfume of violet, lavender and spice. Dense dark cherry and blueberry fruit is perfectly interwoven with nuances of cinnamon, spice and pepper.

Full-bodied with great concentration, and silky tannins this suave wine has impeccable balance and a long future ahead of it.
