A bright wine with a red rim and a darker plum coloured core. Spicy red cherry and dark cherry combination with a smoky character derived from 15 months in oak. There are also hints of caramel from barrel maturation and pepper from the Shiraz component in the wine. As a young wine, the entry to the palate is soft yet fresh. In the mouth the wine expands to give a range of flavours from cherry and dark berries to a spice-like quality. The tannins are firm, but soft enough so as to complement the fruit weight. The wine has a sweet middle palate, but finishes dry.

The 2002 season was characterised by a cold, wet winter and spring, which produced lower yields with good, thick-skinned berries. The cool and dry summer ripened fruit gradually and a warm, dry autumn allowed the grapes to ripen fully, producing some of the best and most exotic characters seen for many years.
A great example of Barossan shiraz. Rich and ripe blackberry fruit partner with well integrated charry oak in the background. A luscious mouthfeel with some earthy tobacco and licorice nuances.
Finishes long. Has developed beautifully and is drinking well.
A special McLaren Vale Shiraz-Cabernet Sauvignon blend from the excellent 2002 vintage. Originally made for a private client from Fox Creek's own grapes, it was for sale to private customers and not available for normal retail sale. The blend in this wine is 60% Shiraz and 40% Cabernet Sauvignon. The Shiraz was fermented on skins for 8 days and about 10% of the wine saw barrel fermentation during the later stages of the fermentation. The Cabernet Sauvignon components were fermented to dryness, before being transferred to oak. Maturation was in approximately 20% French and 80% American oak, with about 30% of this being new oak.
The nose shows intense blackcurrant and cranberry fruit, and the subtle cedary cinnamon spice, barrel-ferment and oak derived aromas, violet and mint scents, as well as liquorice and chocolate smells. Interwined is this wounderful green edge that lifts the wine into a cool climate sepctrum which typifies the cold year. These aromas combine with some cassis, blueberry, and cranberry, with lingering mocha and plumy fruit and are just showing through amongst a long, intense vibrant, gritty fruit tannin finish.
Deep red central core with vibrant purple rim. Showing typical McLaren Vale Cabernet aromas of spicy blackberry and chocolate together with mint and dark cherries complexed by lifted oak char and cinnamon. Intense black fruits and cherries are supported by firm acidity and enveloping tannin structure giving great balance to the depth.
A deep, dark almost opaque black plum red with purple tinges. From one of the most outstanding vintages the 2002 Undercover Shiraz bouquet is a fruit ‘elixir’. Concentrated blackberries, plums, followed by big chocolaty/spicy flavours. Soft, supple mouthfeel with lingering juicy fruit balanced by fine grained oak tannin with a persistent long finish. Pertaringa hopes that this very bottle of Undercover can reveal the essence of McLaren Vale Shiraz.
A seductive bouquet, showing fresh brambly fruit with a menthol lift. Big, very-fine, dusty tannins need time to integrate but the deep, pure, fruit has enough power to kick through. Liquorice, chocolate and black plum flavours finish with terrific length and persistence. A muscular-weight wine its tight and demands time.
A multi dimensional bouquet of roasted meats, mineral, cola, tar and blackberry. Give this one time to open up, this monster is built for the long haul! The palate starts out thick and coating; immediately powerful and explosive, you are then thrown a huge chunk of fruit while the acid and tannin roll around trying to tame it. The wine shows great oak handling and remains succulent, complete and perfectly balanced.
Deep red/black with crimson rim. The nose on this wine displays a mixture of blackberry allspice, raspberry chocolate and licorice with vanilla spice oak characters complementing the fruit perfectly. Powerful blackberries and blackcurrant flavours together with licorice and dark chocolate. These flavours are balanced by firm acidity and fully integrated tannin giving a wine of extraordinary depth and length of finish. This is the epitome of our Reserve Shiraz style.
