Vinification: Clinging to the schist hillsides of Provence, the parcels of Château La Gordonne Terroir Remarquable vineyard are carefully selected for this Vérité du Terroir vintage. The grapes are exclusively harvested at night to benefit from the low temperatures and to increase the quality. They are directly pressed to extract the preliminary aromas. Under the press, the first juices selection allows only the tête de cuvee to be kept. Fermentation occurs at a cool temperature to express the fruits and the aromas.
Food Pairing: To be enjoyed with Mediterranean cuisine, a bourride, a rockfish bouillabaisse, meat and cheese. This rosé also goes well with spicy food.

The grapes for this wine were hand harvested and fermented with natural yeast and no further additions. Created using the saignèe method from all of the red varieties grown at Cullen: this wine shows fresh aromatics combined with great texture to create a beautiful refreshing Rosè. Enjoy this vibrant wine chilled.
This Devil’s Lair Honeybomb Rosé has crushed summer berry flavours with a creamy texture and seductive hint of sweetness. A nose of crushed summer berries with a delicate spice lift. Generous fruit weigh on the palate, with a creamy texture and a seductive hint of sweetness.
There’s a subtle array of pomegranate and rose petals, with savoury red fruit aromas of strawberry and macerated cherry with hints of wildflowers and spice. The palate is lifted with roses, strawberry and glace cherry that frame this structural, floral and dry balanced rosé.

In true Provence fashion, its pale copper with scents of cherry blossom, and ripe red berries. The berry spectrum continues on the palate, but think ripe, plum, juicy berries; add to that some stone fruit and its almost like a Peach Melba in a glass - plenty of freshness and poise but with weight, body and creaminess. As bright as the light over the Mediterranean, with a long dry, crisp finish.
Sourced from vineyards in Mudgee and Orange, this wine truly has the best of both worlds. With Sangiovese, Zinfandel and Barbera being from Mudgee, at an elevation of 520 meters above sea level. These grapes are quite rich and round due to the warmer climate of Mudgee, where the mean January temperature is 23.5°C and average rainfall is 600mm per annum. By contrast, Orange’s cooler climate, and higher elevation of 880 metres, produces more elegant and refined qualities in the Shiraz grapes. Generally one of NSW’s cooler regions, Orange has mean January temperature of 19.15°C with a variance between summer and winter months, and an average rainfall of approx imately 875mm per annum. The soil for both sites is predominately clay loam, which is deep and well drained. With underlying shattered rock and quartz being found in Mudgee, while Orange has the added bonus of red and brown ferrosol soils derived from basalt. These varying conditions add such complexity and depth to the flavour and quality of the grapes. The grapes were harvested earlier than normal to attain bright fresh varietal characteristics. They were then, destemmed and must chilled. This must was drained and soft pressed only after which the settled juice was racked then warmed and inoculated.All varieties were separately fermented in stainless and blended prior to final maturation. As a final blend the batches were racked off gross lees, while still maintaining light lees contact for 6 weeks, and cooled to 10-12°C to allow the midpalate to build texture and depth.The wine was then left to settle before being clarified and bottled in August 2018.
Winemaking: Estate grown in our Mt Barker vineyard. Made from Cabernet Sauvignon and Cabernet Franc. Picked at night to ensure minimum colour pick-up, whole bunch pressed with only 6 hours skin contact.
Story: The Cabernet family grapes are a champion varietal for Rosé. They have a reputation for producing some of the finest Rosé wines. By combining Cabernet Francs proven elegance with Cabernet Sauvignon’s structure and weight, with the natural acidity and elegance of the Adelaide Hills terroir, we have created an exciting fresh and clean style Rosé.

Made from 100% Pinot Noir, that was harvested early during a mild February & March. The conditions generated lifted red berry fruits and a lovely balance.
In the glass this wine shows a pale pink hue. The nose opens with lifted notes of fresh red summer fruits and rose florals. The palate displays a generous burst of raspberry flavour with lashings of florals and a touch of savoury spice. A refreshing line of acidity complements the red berry flavours. The wine finishes with savoury spice and a fine, chalky texture.
Pale pink in colour, sitting well within the classic Provence “pale and dry” spectrum. The nose is lifted and expressive with perfumed aromas of pink florals, red berries, subtle herb and minerals. The palate is fresh, vibrant and fruitful with savoury notes delivering a fine, even, long finish of strawberries, rose petal and fresh herbs. Perfect chilled with a variety of dishes.
Extremely pale in colour, seductively salmon like. The nose shows nicely restrained red fruits, as well as rose petal and enticing spice notes. The palate exhibits a refreshing core of vibrant red berry and candied fruits, culminating with layers of complexity to an impressively long and dry finish. Perfect poolside drinking for summer with a fruit and cheese platter.
Salmon in colour with a blush of violet hue, the wine has strawberry, cranberry fruit with hints of vesty grapefruit. The palate is fresh with juicy raspberry and blueberry and great natural acid. The Mataro provides the aromatic lift of violets and red berry fruits, a touch of tannin from the Nebbiolo and crunchy acidity from the Barbera. This all frames the opulent ripe sweet fruits of Malbec.
A wine to be enjoyed this spring and summer chilled to teeth-chattering, and allowed to warm ever so slightly in glass and enjoyed with freshly caught Crayfish pulled straight out of the cold Southern Ocean waters just over one hundred kilometers west of Coonawarra.

The Last Chance is a beautifully sited two-hectare terrace perched in bright clear air above the Earnscleugh Valley, carefully planted with well-tended Burgundian clone pinot noir. It nestles amongst a small cluster of the World’s most southerly vineyards and takes its name from the watercourse that runs through its heart, hand-dug by gold miners in the 1860s, The Last Chance. Soils are raw schist gravels that are low in fertility and require careful nurturing
