Sao del Coster was a project started in 2004 by two friends passionate about the wines of Priorat, Joel Chevallaz and Michel Grupper. Committed to respecting the terrior and the principles of Biodynamics, the philosophy that drives the winery is minimal intervention to let the vines speak for themselves. The vineyards are worked by a team of mules, utilising the 60+ year old Carinena and Granacha vines for the two single vineyard wines Planassos and La Pujada.
The winery is situated across the valley from the Alvario Palacios winery, in the small mountain town of Gratallops in the region of Priorat. It is located in a tall, narrow stone building on the edge of the town, making a gravity-fed winery a necessity rather than a choice. The winery team make a visit a great experience of welcoming excited from people who are proud of the work they do and the wines they represent. A great insight into a region where adversity is overcome in the pursuit of great wine.

Biodynamically and organically produced, "S" is a combination of Garnatxa Negre, Merlot, Cabernet Sauvignon and Syrah.
The wine uses autochthonous yeasts during the fermentation process and partially fermented with the stems of the grapes.
"S" is aged for 12 months in stainless steel tanks and in oak barrels, and is not filtered.

Biodynamically and organically produced, Terram combine Garnatxa Negre, Carignan, with a small amount of Syrah and Cabernet Sauvignon from vines planted in slate soils.
Terram features fermentation with autochthonous yeasts and is aged 24 months in French oak barrels, with 50% being aged in new barrels.
This wine is unfiltered.
